Wine and cheese—they’ve been paired for centuries, but what truly makes a pairing magical is the story behind it. As someone raised in a culture where wine was more than just a drink—it was an essential part of every meal—I've always approached pairings with the same care and thoughtfulness I put into selecting cheeses. Growing up in Romania, wine was a part of every celebration, every gathering, and every meal. It was a tradition to pair wine with food, and through that, I developed an appreciation for the subtle balance that good pairings can create.


I’ve always been particularly attuned to the acidity and balance in wines, and I bring that sensitivity to every pairing I create. Each wine has a story to tell, and each cheese compliments that story in its own way. When selecting a wine for a cheese board, I don’t just choose based on what’s trendy or popular; I choose based on the moment, the season, and the people I’m serving.


Pairing a rich Pinot Noir with a Manchego or Gruyère isn’t just about flavor—it’s about the experience of how those flavors come together and what they evoke in the people who taste them. I often pair my cheeses and wines with a story in mind, whether it’s an elegant dinner or a cozy evening with friends or a cold night by the fire in my beautiful Santa Ynez valley.
